Chiang Rai, Huai Mae Liam

Huai Mae Liam is a coffee-producing village whose coffee began exporting in 2021. Coffee from this village was previously marketed under the names Doi Chang and Doi Pangkhon, more famous villages.Asor Merlaeku, one of the most sophisticated farmers encountered. The coffee was taken out of the fermentation tank before fermentation was finished, leaving some mucilage on the parchment, resulting in a brightness close to washed coffee but smoothness and sweetness like honey

Step 1

Preparation

  • Boil water in your kettle

  • Put the drip bag onto a mug (Coffee in the drip bag should be able to immerse in water)

  • Set timer to the total brew

  • time of 3 mins.

Step 2

Pre-Infusion

  • Pour water to LINE 4 and wait to 30 seconds

Step 3

Pouring

  • Pour water to Line 2

  • Once water subsides to Line 3, pour water to Line 1

  • Once water subsides to Line 3,  pour water to Line 1 again & stir 10 times in circular motion

Step 4

Finish Off

  • Wait until the timer goes off 3 mins. Then, dispose the drip bag and enjoy your coffee.
