Mae Chedi is traditionally known for its tea plantations, but coffee has been introduced as a replacement for opium. Watchara "M" leads a 19-member coffee cooperative in the Mae Chedi region, where farmers borrow tea fermentation methods and apply them to coffee. These coffee fruits are fermented in closed HDPE bags for 5 days before being pulped, fermented again to remove the mucilage, and then dried on raised beds. This gives the coffee body, sweetness and complexity.

Put the drip bag onto a mug (Coffee in the drip bag should be able to immerse in water)

Set timer to the total brew

Pour water to LINE 4 and wait to 30 seconds

Step 3
Pouring

Pour water to Line 2

Once water subsides to Line 3, pour water to Line 1

Once water subsides to Line 3, pour water to Line 1 again & stir 10 times in circular motion
