Ethiopia, Yirgacheffe
Project Origin is founded by Sasa Sestic, a world champion barista and one of the most influential visionaries in the coffee industry. They establish long lasting direct trade relationships with producers, co-operatives and partners from every origin that they source. In addition to quality beans, they believe that farmers should be paid fairly. Then, we can continue to have outstanding beans to share with roasters across the globe.
Ethiopia is widely recognised as the ‘birthplace’ of Coffea arabica. And of all Ethiopian coffee growing regions Yirgacheffe is perhaps the most well-known and recognised.
In Haru Suke, Yirgacheffe, Ethiopia, wild coffee trees grow in small-holder farmers’ backyards. Cherries are harvested from October – January and taken to the washing station where small-holder lots are combined. This provide a great proportion of income for the local people.
Cherries are dried on raised beds in full sun for 18-30 days to allow the beans to absorb the sweetness and fruitiness from the cherry pulp and skin. They are frequently turned to ensure even drying and maintain clarity.
